How To Make Rajma Galouti Cutlets At Home – Special Recipe By Sridevi Jasti

Step 1: First, boil soaked rajma and all-spice leaves together. (This helps the rajma absorb the leaves’ aroma. If you don’t have these leaves, you could consider balancing the flavours using spice masalas later).

Step 2: Transfer the boiled rajma and potatoes to a bowl/ vessel.

Step 3: Add fennel leaves, coriander leaves, mint leaves, ginger, garlic, salt, green chilli, other chillies, and outenga powder. (This powder is the souring agent – used in place of tamarind, raw mango or kokum in other recipes). Blend these ingredients together.

Step 4: Add chopped onions to the blended mixture.

Step 5: To improve the consistency, mix in some millet flakes as well.

Step 6: Apply some oil to your palms and start shaping the mixture into cutlets.

Step 7: Heat a pan and add a little amount of oil to it. Pan-fry or grill the cutlets till they are golden brown on both sides. Enjoy hot!

Sridevi offers two delectable options for serving. Firstly, it can be relished as a tempting snack, accompanied by refreshing mint and coriander chutney. Alternatively, it can be enjoyed as a wrap. By placing three pieces within a soft tortilla or roti, along with fresh vegetables and a drizzle of mint and coriander chutney, it transforms into a wholesome and flavorful dish for breakfast, lunch or dinner. The versatility of this dish ensures that it can suit different preferences and occasions, making every bite a delectable experience.
